Randy has been in the food and beverage business for over 30 years. Early on, he enjoyed helping his mother in the kitchen. In high school, he was very into painting and drawing and took many art classes. He started working in restaurants at the age of 16 busing tables and doing dishes soon finding his way into the kitchen learning to
Randy has been in the food and beverage business for over 30 years. Early on, he enjoyed helping his mother in the kitchen. In high school, he was very into painting and drawing and took many art classes. He started working in restaurants at the age of 16 busing tables and doing dishes soon finding his way into the kitchen learning to cook. After attending college for a while, he decided to change directions and graduated from Western Culinary Institute in Portland, Oregon. He thought he could blend his creative talents with food and put his art on a plate! He spent 9 years running the kitchen at the famous haunted hotel, "The Lodge in Cloudcroft". Deciding to integrate travel into his life, he moved to Alaska to run the kitchen at a wilderness lodge and then went onto working as a private chef for a catered ski chalet in Breckenridge, CO . Returning home to New Mexico, he worked as Chef de Cuisine at Wendell's fine dining restaurant at the Inn of the Mountain Gods Casino and finished that chapter of life as Executive Chef for Alto Lakes Golf & Country Club, the largest club in New Mexico. Specializing in Southwestern cuisine, he is very excited to fuse these flavors with Bahamian & Asian cuisine.
